Lobster Bisque
A deliciously creamy lobster bisque. An ideal way to impress your guests or to enjoy on a lazy Saturday afternoon with a good crusty bread.
Cooking Instructions
In a large saucepan, melt butter and heat lobster pieces for 4 to 5 minutes. Set aside a few nice pieces for garnish. Add shallots, celery, carrot and garlic; cook for 2 to 3 minutes. Add flour and continue cooking for 2 minutes. Add wine and broth, and continue cooking for 5 minutes. Add tomato paste. Simmer for 30 minutes. Place in blender jar and purée until smooth. Strain through a sieve if desired. Return to saucepan. Add cream and cheese; stir until melted. At serving time, garnish with remaining lobster pieces.

- 250 mL (1 cup) 15% cooking cream
- 45 mL (3 tbsp) butter
- 250 mL (1 cup) pieces of cooked lobster
- 2 shallots, thinly sliced
- 1 stalk celery, sliced
- 1 carrot, sliced
- 2 cloves garlic, minced
- 80 mL (1/3 cup) flour
- 160 mL (2/3 cup) white wine
- 1 L (4 cups) chicken broth
- 30 mL (2 tbsp) tomato paste
- 125 mL (1/2 cup) cubed Old Cheddar cheese
