French Toast with Creamy Coffee Fudge Sauce

Cooking Instructions

To make sauce, in a saucepan, place brown sugar, sugar, cooking cream and butter. Simmer for 5 minutes. Add coffee and simmer for 1 minute more. Remove from heat. To make French toast, beat together table cream, eggs and sugar in a shallow dish. In a frying pan, melt butter. Quickly dip each bread slice in cream and egg mixture then place in hot frying pan. Cook until golden on both sides. Place French toast on 4 plates and top with raspberries and mint. Drizzle with Coffee Fudge Sauce. The sauce will keep in the refrigerator and thicken like caramel.

  • 250 mL (1 cup) 35% cooking cream
  • 500 mL (2 cups) brown sugar
  • 60 mL (1/4 cup) sugar
  • 30 mL (2 tbsp) butter
  • 75 mL (1/3 cup) strong coffee
  • French Toast
  • 250 mL (1 cup) 10% table cream
  • 4 eggs
  • 60 mL (1/4 cup) sugar
  • 30 mL (2 tbsp) butter
  • 8 slices bread
  • 250 mL (1 cup) raspberries
  • To taste fresh mint, finely snipped
